They differ by the manner in which the energy is sourced.
A generator requires a prime mover, whereas an inverter and UPS do not.
Also a generator requires a mechanical governor to regulate frequency whereas an inverter and UPS are digitally controlled and have much faster transient or dynamic response times. The latter are used more for high speed power quality issues.
There are probably many others but these are the basic differences that come to mind.
